Banana Cacao Nib Muffins
Preheat the oven to 190°C
2 ripe bananas
Mash bananas in a bowl
125 g butter, melted
3 large eggs
1.2 dl brown sugar
1 tsp vanilla extract
Add melted butter, eggs, brown sugar, and vanilla to the bananas and blend untill smooth
220 g flour
60 g cacao powder
1.5 tsp baking powder
0.5 tsp baking soda
In a separate bowl, whisk together the flour, cacao powder, baking powder and baking soda
Add dry ingredients to wet ingredients and fold until combined
1 dl cacao nibs
Add cacao nibs and stir
Coat a muffin pan with butter, fill up to 3/4 and bake for around 16 minutes
Check with a toothpick, if it comes out clean, they are done
